School starts for us this week plus soccer for both of the oldest kids so that means twice a week practice plus games on Saturday (x 2). I even have a tentative meal plan to share this week and as much as I’d just like to wing it, I know I need to plan. Feel free to add in whatever else you like! You really don’t need a lot of ingredients to make a salad a good one which is why I limited this one to 3 ingredients. And if you don’t like kale, just make this dressing and put it on anything and everything! I will warn you the raw garlic has a strong presence which I LOVE but if you aren’t a fan, cut down on the amount used. I make my own dressings or if I am lazy just do a simple oil and vinegar and/or lemon juice on our salads but this red wine vinaigrette with shallots and garlic is the prefect accompaniment to this salad. In fact even as leftovers it will hold up nicely, which makes it a great make-ahead lunch idea if you pack your lunch. The great thing, because it’s so hearty, is you can dress it hours before you’re going to eat and it’s not going to get soggy. I’d need a whole separate post just to talk about the benefits, but here are some: full of cancer-fighting compounds, crazy high amounts of Vitamin K (careful if you’re on an anticoagulant medication), Vitamin C, Vitamin A and Iron. Not to mention it’s a nutritional powerhouse. Occasionally I’ll look for a good recipe incorporating kale just to change things up- it’s such a versatile veggie. How do you cut cherry tomatoes for pasta salads: Cherry tomatoes for pasta salads should be cut in half.It’s one of my weekly staples in my CSA box and I love it! I usually sauté it, use it in smoothies or chop it thinly and enjoy it as a salad. Pasta: 15 SP (could vary depending on pasta), Mozzarella: 21SP, Olive Oil: 24SP = 60/6 = 10 SP per serving. WW Points: Will vary depending on the plan you follow. Pesto: You can substitute 1/4 cup basil pesto in place of the dressing. Gluten Free Caprese Pasta Salad: You can make this with gluten free pasta. Red Wine Vinegar: You can substitute red wine vinegar with balsamic vinegar. Olive Oil: We don’t recommend substituting olive oil, but you can substitute avocado oil. It will not taste the same with dried basil. Any fresh mozzarella cheese will work!įresh Basil/Parsley: This recipe really needs fresh basil leaves or parsley. Mozzarella: If you can’t find fresh mozzarella pearls (the tiny mozzarella balls) you can use larger mozzarella balls that have been cut in half or quartered. Tomatoes: You can use cherry or grape tomatoes, or chopped larger tomatoes. You could also make this with orzo or even tortellini. You can use fusilli, rotini pasta, penne, ziti, bowtie, or any medium-length pasta. Pasta: You can use any pasta in this recipe. Pour over the dressing and toss to coat. To assemble the salad, add pasta to a large mixing bowl along with the chopped grape tomatoes, mozzarella pearls, and fresh basil.When the pasta has cooked, drain then rinse with cold water until the pasta has cooled.Whisk all dressing ingredients until combined.Cook the pasta until al dente in salted water.You can find substitutions for all of these ingredients below in the green shaded substitutions box.
